They are soft, naturally sweet, and satisfying with the perfect balance of protein, good fats, and carbohydrates to keep energy levels steady through busy mornings and afternoon slumps.

Made with ripe bananas, almond butter, wholemeal flour, and Nutra Organics Thriving Family Smooth Vanilla, these muffins are nourishing without feeling heavy. They are freezer-friendly, easy to prep ahead, and perfect for families wanting a healthier lunchbox option that still feels like a treat.

Ready in: 45 minutes

Ingredients: 

  • 4 tbsp Thriving Family Smooth Vanilla
  • 3 ripe bananas, peeled and mashed
  • 3 large eggs
  • ½ cup almond butter
  • ⅓ cup maple syrup
  • ¾ cup almond flour
  • ½ cup wholemeal flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 cup blueberries

Method: 

  1. Preheat the oven to 175°C and grease a 12-cup muffin tray with olive oil.
  2. In a bowl, whisk together the almond flour, wholemeal flour, baking powder, Thriving Family Smooth Vanilla, and cinnamon.
  3. In another bowl, mix the almond butter, eggs, mashed bananas, and maple syrup until smooth and well combined.
  4. Fold the dry ingredients into the wet mixture until just combined.
  5. Gently fold through the blueberries.
  6. Divide the mixture evenly into silicone cupcake holders.
  7. Bake for 25 minutes or until a toothpick comes out clean.
  8. Allow the muffins to cool in the tray for 10 minutes before transferring to a wire rack to cool completely.
