The BEST part of homemade banana bread is…knowing exactly what is going into it! Gluten and dairy free, this moist banana bread/slice is a must-have guilt-free treat to have in the house at all times!
My reusable baking mat doesn’t just line my trays but my cake and loaf tins too. I know they can come out a little wonky, but it never lasts long enough in this house for anyone to mind haha. Perfectly imperfect 😂
Recipe: (I made this one gluten & dairy free, but you can substitute what you need!)
Here's what you'll need:
-1 & 1/2 cups GF All purpose Flour
- 2 eggs
- 2-3 VERY ripe bananas (mine were almost hardly bananas anymore haha)
- ½ tsp allspice
- ½ cup raw sugar
- 1 tsp cinnamon
- 1 pinch salt
- ½ tsp baking powder
- ¼ tsp xanthan gum
- ⅓ cup coconut oil
Method:
1. Preheat your oven to 160 degrees (I like to keep it a little lower for GF, so things cook evenly.
2. Line your baking tin with your silicone baking mat
3. Mash up your bananas and combine them with your eggs, sugar, baking powder and spices.
4. In a separate bowl, combine all other remaining dry ingredients and mix into the flour.
5. Combine flour mix to wet ingredients, and mix until smooth.
6. Pour into your tin & bake for approximately 30-40 mins or until golden.
7. Allow to sit and then enjoy!
