5 Ingredient Eggplant Schnitzels  

You know you've got that veggie soup in the freezer that you could heat up, but you're craving something crumbed, crunchy and delicious. I feel you. 

This recipe is not only tasty and easy, but it is also meat-free and beats those crispy cravings with a healthy twist!

In this recipe, I also opt for gluten-free rice crispy crumbs (coeliac life), which I find crisps up so well, but you could blend up some crust bread or old bread or use any breadcrumbs! 

An interesting fact about eggplant is that it contains antioxidants like vitamins A and C, which help protect your cells against damage. It's also high in natural plant chemicals called polyphenols, which may help cells better process sugar if you have diabetes. Well, say no more. Let's get cooking! 

P.s This recipe has been kid, housemate, leftover and fail-proof approved! 

Here's what you'll need: 

  • 1 Eggplant  

  • 2 cups of breadcrumbs (this may vary depending on the size of your eggplant)

  • 1 1/2 Tbsp Mixed Herbs & Spices ( I used chilli flakes, mixed herbs & salt & pepper)

  • 2 Eggs

  • 200mls Olive oil 


Method: 

  1. Slice eggplant into no thicker than 1cm rounds 

  2. I like to salt my eggplant to reduce some of the moisture and set it aside while you prep your crumbs and pan. 

  3. Heat half of your oil in a frying pan on medium heat (I only use half as I find I need some later, so you can add more when needed) 

  4. In a separate bowl, whisk your two eggs and set them aside. 

  5. Combine your herbs and crumbs in another shallow dish and set close by your egg. 

  6. Test that your oil is hot enough by dropping some breadcrumbs into your pan, and if they sizzle, you're good to go! 

  7. Coat your eggplant in the egg and then into your crumb mixture until fully coated and covered. You may need to press it in slightly. 

  8. Transfer your rounds into the hot oil pan slowly and allow them to brown on each side! 

  9. Allow to cool & enjoy with a squeeze of lemon or homemade ketchup!
