Roast Veggie Curried Chickpea Salad  

Looking for a new salad to entertain with, perhaps a salad to impress? Or looking for a new summertime recipe that's not the-same-old salad? 

This curried chickpea salad is full of flavour and can be chopped and changed with whatever salad ingredients you have waiting their turn to be used up, as these chickpeas go with almost anything! 

For the colder weather days, try these chickpeas on top of your favourite soups for extra flavour and crunch! 

Here's what you'll need: 

  • 1 can of chickpeas 
  • 1 Cup washed potato 
  • 1 Cup washed sweet potato
  • 1 Cup pumpkin 
  • 2 Tbsp Olive Oil 
  • ¼ Cup Curry Powder
  • 2 Tsp Oregano
  • 1 Tomato 
  • 1 Small red onion
  • ½ Cup Fresh mango
  • 1 Cup Spinach
  • Dressing of your choice (I used a mango, lime & chilli one!) 

Method: 

  1. Preheat your oven to 170 degrees. 
  2. Line your baking tray with your silicone baking mat. 
  3. Dice your veggies (potatoes & pumpkin) into even-sized cubes and place them into your silicone pouch or large bowl. 
  4. Using only half of your herbs, combine your veggies with olive oil in the bag, seal the bag, and get shaking, baby! 
  5. Once your vegetables are evenly covered, tip them onto your prepared tray and pop them in the oven for around 15 minutes or until evenly roasted. 
  6. Drain your chickpeas, and in the same silicone bag, pour in the chickpeas and the remaining herbs, and yep, you guessed it, get shaking! 
  7. I like to combine my chickpeas with my veggies, mix them through, and allow them to cool and soak in the flavours. 
  8. Meanwhile, slice up your tomato, red onion and fresh mango to create a salsa-like mix. 
  9. On your preferred bowl or serving dish, lay out your bed of spinach. 
  10. Top with your salsa salad mix. 
  11. Then your roast veggies & chickpeas. 
  12. Pull up a chair and tuck in! I also added a chilli lime dressing, but it's optional as this salad is already jam-packed with flavour!
