Vegan Meringue Nests...  

So you're on desserts for Christmas? Or perhaps looking to entertain the table and at the end say "SURPRISE THEY WERE VEGAN"! We feel you, no better feeling haha...

This vegan meringue is not only egg free but we went the extra mile to make it vegan all over... so what did we use instead of egg whites you ask? Why the juice from a can of chickpeas, ofcourse! 

The brine that comes from your chickpeas is known as aqua-faba and is commonly used as an egg white substitute. 

You can obtain it two ways: 1) Drain a can of chickpeas and reserve the liquid. Or, 2) Cook your own chickpeas and reserve the leftover cooking liquid.

Either way, get ready to impress with these nests!  

Here's what you'll need: 

  • 1 can chickpea water
  • 1 cup icing sugar
  • 1/2 tsp cream of tatar
  • pinch salt
  • 1-1/2 cups vegan whipped cream to decorate or coconut yoghurt works a treat too!
  • Mixed berries & fruits of your choice for topping
  • (we love to add passionfruit)

Method: 

  1. Preheat your oven to 110c and line a tray with your baking mat (your reusable silicone baking mat ofcourse).
  2. In a bowl, beat your aqaufaba with an electric whisk until it appears light and fluffy (like egg whites). This should take about 3 - 5 minutes.
  3. Add salt, cream of tatar and bit-by-bit pour in your icing sugar whilst continuing to whisk. Whisk on high for a futher 5-7 minutes until you see those peaks start to form!
  4. Tasnfer your meringue into a fabric piping bag ( you could also make a pavlova style base at this stage but we chose to make cute little nests). Pipe into meringue nest shapes. 
  5. Gently place them into the oven to bake for 2 hours. Allow the meringues to cool in the oven for a further 1-2 hours without opening the door. (My one bad habit haha) 
  6. Once cooled, decorate with vegan whipped cream and your mixed fruits of choice!
  7. Enjoy!
