Stephy's Apple Pie Overnight Oats...

Alright Stephy, you had us at apple pie! 

The best thing about overnight oats is that you can make them ahead of time if you need to zip out the door, I'm just lucky if it makes it to the door... especially when you know it's apple pie flavour! 

This recipe is a great one for our reusable silicone pouches, a jar you already have, or our silicone food coversto cover any bowl or cup you make this recipe in! 

Let's get into it...

Here's what you'll need: 

For the apples:

  • 1 sweet apple, cut into bite-size pieces (peeling is optional)
  • 3/4 tsp ground cinnamon
  • 1 Tbsp maple syrup
  • 1 pinch sea salt

For the oats:

  • ¾ Cup almond milk
  • 1 Tbsp Chia Seeds
  • 1 Tbsp Maple Syrup
  • ½ Tsp Ground Cinnamon
  • 2 Tbsp Cashew or Almond Butter
  • 1 Tsp Vanilla Extract
  • ½ Cup Rolled Oats
Method:
  • Combine the chopped apples, cinnamon, maple syrup, and salt in a saucepan and mix to evenly distribute the cinnamon. (Smells good already)
  • Cover and turn the heat down low to allow the apples to stew. Cook, stirring occasionally, for about 10 minutes or until the apples are soft and tender. Remove the lid, turn the heat up to medium, and cook for 2-3 more minutes, stirring constantly, to evaporate some of the liquid and create a nice silky syrup for the apples.
  • Then turn off the heat and set aside.
  • Mix the almond milk, chia seeds, maple syrup, cinnamon, nut butter, and vanilla in a bowl. Add the oats and stir until well-combined.
  • Grab your jars!
  • Place about a quarter of the cooked apple mixture into the bottom of each container, add half the oat mixture to each as your middle layer, then divide and place the rest of the cooked apples on top of the oats.
  • Place in the fridge overnight, or for at least 6 hours.
  • Enjoy! 


These overnight oats will keep in the refrigerator for 2-3 days but this is so yummy it never lasted that long before being demolished!
