Stephy's Easy Zucchini Fritters

Hello, foodies! 

As you know, everything our Stephy makes in the warehouse, we turn into a recipe. She is an amazing cook and makes healthy easy recipes. Yes, we love her!

Recently, she has been whipping up some delicious zucchini fritters on her lunch break using just a simple sandwich press so if you are in the mood for a quick and tasty snack that's easy to make and packed with veggies? Well, we have a treat for you today! 

These fritters are crispy on the outside, fluffy on the inside, and bursting with the goodness of fresh zucchini. Plus, they're a great way to sneak in some extra veggies into your diet. So let's head over to the break room and join Stephy as she shows us how to make these mouth-watering fritters in a jiffy!

Here’s what you’ll need:

  • 2 zucchinis
  • 1 carrot
  • 2 eggs
  • 3 tablespoons of flour of your choice
  • 1 tablespoon of nutritional yeast
  • 1 stalk of green onion
  • Salt and pepper

Method:

  1. Grate the zucchini and carrot, and squeeze out the excess liquid using a cheesecloth or nut bag.
  2. In a mixing bowl, beat the eggs and then add the grated vegetables.
  3. Add the flour, nutritional yeast, green onion, salt, and pepper, and mix everything well.
  4. Heat a pan on medium-high heat and add a tablespoon of oil.
  5. Spoon the mixture into the pan, forming small fritters.
  6. Cook the fritters for about 2-3 minutes on each side, or until golden brown.

Enjoy! We paired ours with the zesty coconut yoghurt for some extra. Yum!
